Friday can always be a bit harry for us, whether it be a party and a la carte or no customers at all, it is always a bit tricky. We started the day with some final prep for the parties today and Saturday. We had a 30 person group come in at 1pm today for a 4 course meal. It was quite the event, lots of singing and all sorts of shenanigans from the group. Pizza class was also scheduled to come in in the afternoon, so we were very excited to take our leave as quickly as possible for siesta. However, we were beef sidetracked.
Carlo had a side of beef delivered to the restaurant, its intended use was for tenderloins, steaks, and ground meat for ragu (and hopefully hamburgers too!). Carlo took no time at all fabricating the massive side. In less than 30 minutes it was broke down and wrapped up and put away. It was a beautiful sight. The best party, delicious steaks for dinner!!!
On the trip home to the kitchen, we welcomed a new roommate, Angela from JW had flown in to start an internship in the front of the house. We introduced her to the house and all the silly rules we have here, like don’t stare at the fresco. We started dinner service with the best family meal yet, Beef Lombo and French Fries with mayo and Ranch Dressing!!!(thanks Drew). The fresh steaks were so very, very good. After service, we cleaned and butchered down all the steaks into the appropriate pieces. The loin alone was 4 kilos (8.8 lbs) yummy! We had some customers come in, so I was able to cook all the hot line items on my own, way fun.
After service, I was craving some gelati, but the lady had already closed up shop, bummer. We headed home and I set up our internet at the house, but needed some final paperwork from Vito for it, so Domani, domani! We are headed to a pretty big party Saturday night for Carnivale, so I rested up, big day ahead!
